Gluten-Free Papas a la Huancaina

At the time I felt devastated — the idea of losing foods I loved was overwhelming. But instead of giving up, we adapted the recipe to be gluten-free. The result is a faithful, delicious version of Huancaina sauce that our whole family enjoys. It’s creamy, slightly spicy, and full of the bright flavors that make this Peruvian classic so memorable.

A Love for Peruvian Food
Papas a la Huancaina — potatoes in Huancaina sauce — is one of my favorite Peruvian dishes. The rich cheese sauce, the mild heat from aji amarillo, and the tender potatoes form a perfect balance. Our gluten-free adaptation uses gluten-free crackers to thicken the sauce, preserving the texture and flavor of the original. Over time, even friends and family who aren’t gluten-free prefer this version.
Quick and Easy Potatoes with Spicy Cheese Sauce
This Huancaina sauce is made in a blender and comes together quickly. Below are notes for certain ingredients to help you recreate authentic flavor and texture. If you can’t find a specific item locally, look for suitable gluten-free alternatives at your grocery store.
Ingredients
- 1/2 block (3.5–4 ounces) Queso Blanco
Any Queso Blanco that is not labeled “for frying” will work. The cheese should be mild and firm enough to blend smoothly.
- 1/3 cup ground saltine-style gluten-free crackers
Gluten-free saltine-style crackers create the classic Huancaina texture. If you are not gluten-free, plain saltine crackers (without heavy surface salt) will work as well.
- 1 tablespoon chopped onion
- 1–3 teaspoons aji amarillo paste
Aji amarillo paste varies in heat and concentration. Start with a small amount and increase to taste. The paste gives the sauce its characteristic fruity, mildly spicy flavor and its yellow-orange color.
- 1 teaspoon chopped garlic
- 1/4 teaspoon salt
Add salt sparingly at first, since cheese brands differ in saltiness. Taste before adding more.
- 1 cup milk
Use whole milk or 2% for the best creamy texture. Skim milk tends to make the sauce thin and less rich.

Ingredients
For the Huancaina Sauce
- 1/2 package Queso Blanco (3.5–4 ounces)
- 1/3 cup ground gluten-free saltine-style crackers
- 1 tablespoon chopped onion
- 1 teaspoon minced garlic
- 1–3 teaspoons aji amarillo paste, to taste
- 1/4 teaspoon salt (adjust after tasting)
- 1 cup milk (whole or 2%)
For Serving
- 4 baking potatoes, boiled, peeled and sliced
- 2 hard-boiled eggs, sliced
- Black olives, for garnish
Instructions
- Sauté the chopped onion, garlic and aji amarillo paste in a small pan just until the onion softens and the paste becomes fragrant.
- Break the Queso Blanco into pieces so it blends more easily.
- Place the sautéed onion mixture, cheese, ground crackers, milk and salt into a blender.
- Blend until completely smooth. This can take a few minutes; resist the urge to add more milk immediately. The cheese needs time to fully incorporate into the milk for the proper texture.
- Taste the sauce and adjust seasoning. Add more salt or aji amarillo paste if needed.
- Serve the sauce over cold, sliced boiled potatoes. Garnish with sliced hard-boiled eggs and black olives. The sauce also works well over rice or as a spread for sandwiches.
Notes
Consider adding salt at the end, since different cheeses vary in saltiness. Aji amarillo paste ranges widely in intensity, so add gradually and adjust to your preferred heat level.
