10-Minute Creamy Coconut Sauce Recipe

This quick 10-minute coconut sauce is made from canned full-fat coconut milk (or coconut cream), sweetened with sugar and thickened with cornstarch. It’s a silky, versatile topping often used on Southeast Asian desserts, but it also works beautifully as a tropical coconut syrup for pancakes, French toast, or drizzled over baked goods to brighten your brunch or dessert spread.

Beyond Southeast Asia, a similar sauce is used to bake Samoan coconut buns where rolls bake in a pool of the sauce, producing a soft, glossy finish. It’s also delicious poured over banana bread French toast or macadamia nut pancakes for an island-inspired twist.

  1. Coconut milk – Use full-fat canned coconut milk or coconut cream for the richest texture. Coconut cream will make an even creamier, more luxurious sauce.
  2. Sugar – Granulated sugar works well. Brown sugar can be used for a deeper, caramel-like flavor if you prefer.
  3. Cornstarch – This thickens the sauce while keeping it smooth and pourable. If you need a substitute, tapioca starch or arrowroot can work, but cook times and final texture may vary slightly.
  4. Salt – A small pinch enhances the sweetness and rounds out the coconut flavor.

How to make coconut sauce

Below is an easy method that yields a glossy, pourable coconut sauce in minutes. You can double the recipe if you need more, but use a larger saucepan to avoid boilovers.

A note on equipment: A small stainless-steel saucepan works perfectly for one can of coconut milk. No special tools are required—just a whisk and a heatproof spoon.

Measure about 1/4 cup of the coconut milk at room temperature and whisk the cornstarch into it until fully dissolved to make a smooth slurry.

Tip: Always dissolve cornstarch in cold or room-temperature liquid before adding it to heat. Adding cornstarch directly to hot liquid can create lumps.

Warm the remaining coconut milk with sugar and a pinch of salt over medium heat until it begins to simmer. Slowly pour in the cornstarch slurry while stirring continuously. Cook for another 2–3 minutes, stirring, until the sauce slightly thickens. Remove from heat and cool; it will thicken more as it cools.

Testing notes

While cooking, the sauce may appear only slightly thickened. It continues to set as it cools. Using one tablespoon of cornstarch yields a pourable, maple-syrup-like consistency that spreads easily over pancakes. Two tablespoons produces a much thicker, spoonable sauce that firms up when chilled. Three tablespoons will create a pudding-like set, similar to a soft coconut pudding—useful if you want a firmer texture, but unnecessary if you want syrup.

Storage

Store the cooled coconut sauce in a clean jar with a lid in the refrigerator for up to one week. For longer storage, freeze in an airtight container for up to three months. Thaw at room temperature, stir well before serving to restore smooth consistency, and reheat gently if desired.

  • 1 can coconut milk (or coconut cream), 13.5 oz / 400 ml
  • ⅓ cup granulated sugar (or brown sugar), 66 g
  • A pinch of kosher salt
  • 1 tablespoon cornstarch

Instructions

  • Whisk 1/4 cup of room-temperature coconut milk with the cornstarch until fully dissolved; set aside.
  • Place the remaining coconut milk in a small saucepan with the sugar and a pinch of salt. Heat over medium, stirring frequently, until the sugar dissolves and the mixture begins to simmer.
  • Slowly pour the cornstarch slurry into the simmering coconut milk while stirring constantly. Cook 2–3 minutes more until the sauce starts to thicken slightly.
  • Remove from heat and let cool; the sauce will continue to thicken as it cools. Use warm or chilled as desired.
