The result became these brownie-like cookies with a luscious mocha topping.

To make the mocha glaze the star, I thickened it with powdered sugar until it reached a spreadable frosting consistency. I kept the cookie base essentially the same — a soft, drop-style brownie cookie — and focused on creating a creamy, coffee-flavored chocolate topping that complements the rich cookie.

Variations you could try

These cookies are flexible and welcome a few fun variations. Consider topping them with mini marshmallows for a hot chocolate-inspired cookie, or swap the mocha frosting for a peanut butter frosting for a classic flavor pairing. Ingredients

Cookies

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • 3 tablespoons cocoa powder
  • 1 egg
  • 1 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup sour cream

Frosting

  • 3 tablespoons hot coffee
  • 1 tablespoon melted butter
  • 1 tablespoon cocoa powder
  • 3 cups powdered sugar

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a medium bowl, sift together the flour, baking powder, salt, baking soda, and cocoa powder. Set aside. Line a baking sheet with parchment paper or a silicone mat.
  3. In a stand mixer or using a hand mixer, beat the egg, sugar, and vanilla until well combined. Add the sour cream in two additions, mixing until smooth.
  4. Mix in half of the dry ingredients, then continue adding the remaining dry ingredients in portions, scraping the bowl as needed to ensure everything is evenly combined.
  5. Use an ice cream scoop or spoon to drop even portions of dough onto the prepared baking sheet. Bake for 12–14 minutes, or until the centers are set and the cookies are baked through.
  6. Remove the cookies from the oven and let them cool completely on a wire rack before frosting.
  7. To make the frosting, whisk together hot coffee, melted butter, and cocoa powder until smooth. Gradually add powdered sugar and mix until the frosting is thick and spreadable. Add more powdered sugar for a firmer frosting or a splash of coffee if it’s too thick.
  8. Spread the mocha frosting over cooled cookies. Allow frosting to set before serving.
