🤔 What’s the difference between butterscotch sauce and caramel sauce?

They are made using similar techniques, but the key difference is the sugar. Caramel sauce is typically made with granulated white sugar, while butterscotch uses brown sugar, which adds a richer, molasses-like flavor. Both are cooked on the stovetop and finished with butter and cream, but the brown sugar gives butterscotch its distinctive depth.

🥄 Make the butterscotch sauce

Begin by preparing the butterscotch sauce so it can cool slightly before blending into the shake. In a small pot over low–medium heat, melt the butter. Stir in the packed dark brown sugar until the mixture is smooth and combined.

Carefully add the heavy cream and raise the heat until the sauce comes to a gentle boil. Reduce the heat and let the sauce simmer for about five minutes, stirring occasionally. Remove from the heat, then stir in the vanilla extract and a pinch of flaky sea salt. Allow the sauce to cool for several minutes; it will thicken as it cools.

🥣 Make the shake

When the sauce has cooled slightly, you’re ready to make the milkshake. Combine the milk, vanilla ice cream, and the cooled butterscotch sauce in a blender. Blend until smooth, about 20–30 seconds, depending on your blender and desired thickness.

Pour into chilled glasses and top with a dollop of whipped cream, an extra drizzle of butterscotch sauce, and a scattering of butterscotch chips if you like. Serve immediately while cold and frothy.

There are several easy swaps to make this shake your own:
