Sesame Green Beans with Mushrooms and Chestnuts

These sesame green beans are an easy, flavorful side dish that comes together in under 20 minutes. Tender-crisp green beans are tossed with browned button mushrooms, crunchy water chestnuts and a light soy-sesame sauce. It’s a healthy, versatile dish that pairs well with grilled meats, roasted proteins, or as a vegetarian main served over steamed rice. Simple pantry ingredients and a quick skillet make this a great weeknight recipe.

Ingredients

  • 5 oz button mushrooms, sliced
  • 2 tsp canola oil
  • 2 tsp sesame oil
  • 3/4 lb green beans, ends trimmed
  • 1 small can sliced water chestnuts, drained
  • 2 small cloves garlic, minced
  • 2 tbsp water
  • 4 tsp soy sauce
  • 2 tsp sugar
  • Sea salt, to taste
  • Freshly cracked black pepper, to taste
  • Sesame seeds, for garnish

Equipment

  • Large skillet
  • Small bowl for the sauce
  • Knife and cutting board
  • Measuring spoons

Instructions

  1. Heat a large skillet over medium heat and add the canola oil and sesame oil.
  2. When the oils are hot, add the sliced mushrooms. Let them cook undisturbed for about 2 minutes per side so they develop color and a little caramelization. Avoid stirring too soon — browning adds flavor.
  3. Add the minced garlic, trimmed green beans, and drained water chestnuts to the skillet. Season with a pinch of sea salt and some freshly cracked black pepper.
  4. In a small bowl, whisk together the 2 tablespoons of water, soy sauce, and sugar until the sugar dissolves.
  5. Pour the sauce over the vegetables and cook, stirring occasionally, for 3–4 minutes or until the green beans are tender-crisp. The exact time will depend on bean thickness and personal preference for doneness.
  6. Remove the skillet from the heat and transfer the vegetables to a serving dish. Sprinkle sesame seeds over the top and adjust seasoning with additional sea salt and black pepper if needed.
  7. Serve hot alongside grilled or roasted proteins, or spoon over steamed rice for a meatless meal.

Tips and Variations

  • Trim the green beans by snapping or cutting off the stem ends; this takes only a few minutes and improves texture and presentation.
  • If button mushrooms aren’t available, use cremini or shiitake for a deeper flavor. Slice them thinly for even cooking.
  • For more heat, add a pinch of red pepper flakes or a dash of chili oil when you add the sauce.
  • To make the dish gluten-free, substitute tamari for the soy sauce.
  • If you prefer a saucier result, increase the water and soy sauce slightly, then simmer a minute longer until the sauce coats the vegetables.
  • To add protein, toss in cooked sliced chicken, tofu, or edamame at the end to warm through.

Storage

Refrigerate leftovers within two hours in an airtight container. Use within 3–4 days for best quality. Reheat gently in a skillet or microwave; avoid prolonged reheating to keep the beans from becoming mushy.

Notes

  • Prep time includes trimming the beans, slicing mushrooms if needed, mincing garlic, and mixing the sauce.
  • Avoid overcooking to maintain the bright color and crisp texture of the green beans.
  • Sesame seeds add a nutty finish and light crunch; toasted sesame seeds deepen the flavor if you have them on hand.

Enjoy this quick, savory side that’s easy to scale and customize to your taste.
