Description

Ingredients

  • 2 lbs ground sweet Italian sausage
  • 2 lbs russet potatoes, peeled and cut into even cubes
  • 1 cup onions, coarsely chopped
  • 1 cup green bell pepper, coarsely chopped
  • 1 cup red bell pepper, coarsely chopped
  • 1/4 cup water
  • 1 tbsp olive oil
  • 2 tsp salt (adjust to taste)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp Italian seasoning
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and cut the potatoes into even-sized cubes so they cook uniformly.
  3. Coarsely chop the onions, green peppers, and red peppers.
  4. If using bulk sausage, break it into pieces and form into small rectangular or bite-sized shapes; if using links, slice or remove casings and break into chunks.
  5. Combine the potatoes, sausage, onions, and peppers in a large casserole or baking dish.
  6. Sprinkle the salt, garlic powder, onion powder, Italian seasoning, black pepper, and red pepper flakes over the mixture. Toss everything together to coat evenly.
  7. Drizzle the olive oil and pour in the 1/4 cup of water to help the potatoes steam and become tender during baking.
  8. Cover the dish with aluminum foil and bake for about 60 minutes, or until the potatoes are mostly tender.
  9. Remove the foil and bake uncovered for an additional 15–20 minutes, or until the sausage is browned and the potatoes are golden. If needed, broil briefly to brown the top—watch carefully to avoid burning.
  10. Remove from the oven, let rest a few minutes, then serve hot.
