- 1 teaspoon pure vanilla extract
- 2 ¼ cups (250 g) cake flour
- 1 ½ cups (300 g) sugar
- 4 teaspoons baking powder
- 1 teaspoon salt
- 12 tablespoons (1 ½ sticks / 170 g) unsalted butter, softened
For the frosting:
- 8 oz (225 g) cream cheese, softened
- 8 tablespoons (1 stick / 115 g) unsalted butter, softened
- 4 cups (450 g) powdered sugar
- 1 tablespoon pure vanilla extract
- 1 tablespoon heavy cream
- Pinch of salt
- 1 cup blue or pink assorted sprinkles for filling
- ½ cup mix of blue and pink sprinkles for decorating
Instructions
- To make the cake: Spray three 8-inch (20 cm) round cake pans with cooking spray. Line the pans with parchment paper and spray the parchment lightly as well.
- Preheat the oven to 350°F (175°C).
- In a medium bowl, whisk together the milk, egg whites, almond extract, and vanilla extract.
- In the bowl of a stand mixer fitted with the paddle attachment, combine the flour, sugar, baking powder, and salt on low speed. Add the butter and mix on low until no dry patches remain.
- Add half of the milk mixture and beat on medium speed for 1½ minutes. Add the remaining milk mixture and beat for an additional minute, scraping the sides of the bowl once halfway through.
- Divide the batter evenly among the three prepared pans and smooth the tops. Bake for 20–25 minutes, or until golden and a toothpick inserted into the center comes out clean.
- Let the cakes rest in the pans for 3 minutes. If needed, loosen the edges with a knife, then invert onto a wire rack to cool completely. Layers can be wrapped and stored at room temperature for up to one day.
- To make the frosting: In a mixing bowl fitted with a whisk attachment, beat the cream cheese and butter until smooth and fluffy. Add the powdered sugar, vanilla, heavy cream, and a pinch of salt. Begin on low speed until the sugar is absorbed, then increase to medium-high and beat until creamy.
- To assemble the cake: Cut each of the three cooled cakes horizontally into two even layers to yield six layers total. Reserve two whole layers for the bottom and top. On the other four layers, cut a 2.5-inch (5 cm) circle from the center to form the cavity.
- Place the bottom whole layer on a serving platter and spread about one-eighth of the frosting evenly. Add a layer with the cutout center, spread frosting, and continue stacking the remaining hollowed layers in the same way. Smooth a thin coat of frosting on the inner walls to seal them.
- Fill the center cavity with the blue or pink sprinkles and small candies, then top with the reserved whole layer. Frost the entire cake with the remaining frosting and press a mixture of blue and pink sprinkles onto the sides and top for decoration.
