It’s also eggless, which makes it easier to scale and offers an easy vegan option when you use non-dairy milk and a plant-based spread for the frosting.

MINI CHOCOLATE CAKE

To make a cake small enough for two, use two 4-inch cake tins. These compact pans produce just the right amount of cake to slice and share. If you need a slightly larger dessert to serve a small family, the recipe includes a doubled version for two 6-inch layers.

This cake keeps things simple: a glossy, well-mixed batter, a short bake, and a rich chocolate frosting. The batter uses oil and milk (or non-dairy milk) with a little cider vinegar to achieve a tender crumb without eggs.

SEDUCTIVE FROSTING? YOU BET!

A great frosting turns a small cake into a special occasion. I used Angostura Cocoa Bitters, which are made with Trinitario cocoa nibs and botanicals, to add a subtle cocoa spice to the frosting. A little dark rum rounds out the flavour, but you can substitute milk if you prefer a non-alcoholic version.

This frosting recipe yields more than enough for a four-inch layered cake, with extras for piping or decorating. For a lighter finish, make a naked cake and leave the sides mostly exposed, or fully cover the cake for a classic look.

HOW TO MAKE A MINI CHOCOLATE CAKE THAT SERVES TWO

STEP 1. Preheat the oven to 180°C (350°F). Line two 4-inch cake tins with parchment paper and grease the sides lightly.

STEP 2. Combine all liquid ingredients in a medium bowl and whisk until blended.

STEP 3. Add the sugar, flour, cocoa powder and baking soda. Stir from the centre, gradually incorporating the dry ingredients until the batter is smooth and glossy.

STEP 4. Divide the batter between the prepared tins and bake for 25–28 minutes. The cakes are done when risen and springy and a toothpick inserted in the centre comes out clean. Cool the cakes in their tins for 10 minutes, then turn out onto a wire rack to cool completely.

MAKE THE CHOCOLATE FROSTING

STEP 1. Melt the dark chocolate chips in a heatproof bowl set over barely simmering water, stirring until smooth. Remove from the heat.

STEP 2. Add the icing sugar, cocoa powder and softened spread or butter, and mix on low speed until combined. Gradually increase speed to achieve a smooth texture.

STEP 3. Stir in Angostura Cocoa Bitters and rum (or milk) and beat until the frosting holds soft peaks and is spreadable.

ASSEMBLE YOUR MINI CHOCOLATE CAKE

STEP 1. Spread or pipe frosting over the bottom layer, sandwich with the top layer, then frost the top and sides if desired. For a rustic look, leave the sides partially exposed for a naked cake.

STEP 2. Decorate with sprinkles, chocolate shavings or candy. Serve immediately and enjoy with someone special.

TIPS AND FAQs

  • Bake the layers the day before if needed: cool completely, wrap in clingfilm and store at room temperature.
  • For a white chocolate frosting, swap dark chocolate for milk or white chocolate chips (note this will not be vegan).
  • Use natural (not Dutch-processed) cocoa powder in the cake — it reacts with the baking soda to help the cake rise.

Ingredients

To make two 4-inch layers

  • 30 ml (1/8 cup) vegetable oil
  • 80 ml (1/3 cup) almond milk or dairy milk
  • 1/2 tbsp cider vinegar
  • 1 tsp vanilla extract
  • 70 g (1/3 cup) sugar
  • 65 g (1/2 cup) plain flour (all-purpose)
  • 2 tbsp unsweetened cocoa powder (natural)
  • 1/2 tsp baking soda

Chocolate Frosting

  • 80 g (1/2 cup) dark chocolate chips
  • 120 g (1 cup) icing sugar
  • 3 tbsp unsweetened cocoa powder
  • 75 g (1/3 cup) softened non-dairy spread or unsalted butter
  • 1 tsp Angostura Cocoa Bitters
  • 2 tbsp Angostura Rum or milk

To decorate

  • Sprinkles, chocolate shavings or small candies

Instructions

Make the cake

  1. Preheat oven to 180°C (350°F). Line two 4-inch tins with parchment and lightly grease.
  2. Whisk together oil, milk, vinegar and vanilla until combined.
  3. Add sugar, flour, cocoa and baking soda. Stir to a smooth batter.
  4. Divide between tins and bake 25–28 minutes until springy and a toothpick comes out clean. Cool in tins 10 minutes, then transfer to a rack.

  1. Melt chocolate over simmering water until smooth.
  2. Mix in icing sugar, cocoa and softened spread on low speed to combine, then increase to achieve a smooth texture.
