  • Egg — beaten and used to seal and glaze the pastries.

Step by step instructions:

The first four steps to make this recipe - a sheet of pastry with a love heart cutter, cut heats on a baking tray, spreading the mustard on the love hearts, and then adding the ham and cheese.

Remove the puff pastry from the freezer to defrost while you preheat the oven to 200°C (400°F). Keep the pastry cool until you cut and assemble it so it remains easy to handle.

  1. Cut out 16 heart shapes from two sheets of puff pastry (approximately 7cm / 2.75in cutter works well).
  2. Line a baking tray with baking paper and place 8 hearts on the tray.
  3. Spread a thin layer of Dijon mustard over each of the 8 hearts, leaving a ½ cm (0.2 inch) border free of filling.
  4. Sprinkle grated cheddar evenly over the mustard, then top with finely chopped ham. Press the filling down gently so it sits flat in the centre.
  5. Brush the exposed edge of each heart with beaten egg. Place a second pastry heart on top and press the edges together to seal. Use the tines of a fork to crimp and secure the edge.
  6. Prick the top of each pastry a couple of times with a fork to allow steam to escape during baking.
  7. Brush the top of each pastry with a little beaten egg for a golden finish.
  8. Bake in the preheated oven for 13–15 minutes, or until puffed and golden. Allow to cool briefly on the tray before serving.

  • 2 sheets butter puff pastry (approx. 22½ cm / 9″ square)
  • 1½ tablespoons Dijon mustard
  • 25 g (0.8 oz) ham, finely chopped
  • 35 g (⅓ cup) grated cheddar cheese
