Bacon Salt: How to Use It, Recipe Ideas and Flavor Pairings

Try Homemade Bacon Salt on anything and everything. Sprinkle it on chips, mix it into salad dressings, rim a margarita glass, or dust it over popcorn — this little condiment brings deep, savory flavor to sweet and savory dishes alike.

Bacon and salt are a natural pairing, and this simple recipe turns them into a versatile seasoning. I first tasted bacon salt on fries at a restaurant and immediately began making my own so I’d always have a jar in the fridge. It enhances ordinary food with a smoky, umami kick and is easy to make at home.

Why should you make bacon salt?

  • Adds savory umami to bland dishes and snacks.
  • Incredibly simple to prepare — only three main ingredients.
  • Stores in the fridge so you can reach for it whenever you want to boost flavor.

How do you use bacon salt?

Bacon salt is an all-purpose finishing seasoning. A few ideas:

  • Sprinkle over buttered popcorn for a cinema-style treat.
  • Use as a final dusting on roasted potato or sweet potato wedges.
  • Add to salads in place of or alongside other finishing salts to lift greens and dressings.
  • Stir into tomato sauces, marinades or stews for extra depth and smoky notes.
  • Rim a cocktail glass or add to rubs for grilled meats and vegetables.

How do you make it?

  1. Preheat the oven to 180°C (350°F). Place the smoked streaky bacon rashers on a baking tray and bake for 20–25 minutes, until the bacon is crisp and dry but not burned.

  2. Remove the bacon from the oven and drain on kitchen paper to absorb excess fat. Let the rashers cool and dry completely.

  3. Break the cooled bacon into pieces and place in a food processor. Pulse until the bacon is in very small shards. Add the sea salt and ground white pepper, then pulse again until the bacon is evenly dispersed through the salt as tiny meaty flecks.

What salt should you use?

A flaky sea salt works best because it grinds well and provides delicate flakes throughout the mix. Maldon sea salt is a good example of a flaky salt that produces a pleasant texture and subtle taste, but any flaky sea salt will do.

Recommended equipment

A small food processor or a powerful blender will give the best results for creating even, fine bacon pieces mixed through the salt. A baking tray and kitchen paper are useful for drying the bacon after cooking.

How long does bacon salt keep?

Store bacon salt in an airtight container in the refrigerator. Because salt helps preserve the bacon, it will keep well; practical use is typically within two to three weeks. Many people use a batch within that period and prefer it fresh, but refrigeration is recommended for safety and flavor.

Can you grill the bacon instead?

Yes — grilling or pan-frying the bacon works and usually takes less time. Roasting is convenient because the baking tray collects rendered fat, and the bacon dries evenly. If you grill, watch closely so the bacon crisps without burning.

Bacon fat

Rendered bacon fat is a bonus byproduct. Save the fat in a jar in the fridge and use it in place of butter or oil to fry steaks, pancakes or as the start of a roux. It adds a rich, smoky background flavor that pairs perfectly with a final sprinkle of bacon salt.

Author: Georgina Hartley

Yield: approximately 50 servings (depending on how fine you grind)

Prep time: 10 mins • Cook time: 25 mins • Total time: 35 mins

Ingredients

  • 6 rashers smoked streaky bacon
  • 135 g flaky sea salt (for example Maldon)
  • ¾ teaspoon ground white pepper

Instructions

  1. Preheat the oven to 180°C (350°F). Arrange the bacon rashers on a baking tray and bake for 20–25 minutes until crisp but not burnt.
  2. Remove bacon and drain on kitchen paper. Allow the rashers to cool and dry fully.
  3. Place cooled bacon pieces into a food processor. Pulse until the bacon breaks into tiny shards.
  4. Add the flaky sea salt and ground white pepper. Pulse until the bacon is evenly mixed through the salt with small, meaty flecks.
  5. Store the bacon salt in an airtight container in the refrigerator.

Notes

Bacon salt keeps well for at least two weeks in the fridge. Adjust the amount of salt to taste — if you prefer a milder seasoning, reduce the salt slightly or add more bacon. For smoky variations, try smoked salt in place of part of the sea salt.
