Margarita Chicken with Tequila Lime Marinade Recipe

My Margarita chicken features juicy grilled chicken bathed in a bright tequila lime and orange marinade. The flavors are vibrant and fresh, and the recipe requires only about 15 minutes of active prep time. It’s an easy, reliable weeknight main that also shines at summer cookouts.

Chicken is a fantastic blank canvas for bold flavors. Previously I’ve shared playful variations like potato chip chicken, Ritz cracker chicken, and chicken piccata meatballs. This margarita chicken is inspired by a favorite restaurant version: tender, tangy, and consistently perfect. Serve it on its own, slice it for tacos, or add it to burrito bowls for a bright, citrus-forward dinner.

Why This Recipe Works: A Sprinkle of Food Science

  • Citrus Tenderizes: Lime and orange juice help break down muscle fibers, producing tender, juicy chicken without long marinating times.
  • Even Thickness Cooks More Evenly: Pounding chicken to an even thickness (about ¾ inch) helps it cook quickly and uniformly so the center stays moist.
  • Sear, Don’t Steam: Pat the chicken dry before grilling or searing to get a good char and appealing grill marks. Browning adds flavor.

Ingredient Notes and Shopping Tips

  • Chicken Breasts: Choose four boneless, skinless breasts totaling about 2 pounds. Look for pieces that are similar in size so they cook evenly. If any are thick, pound them to about ¾ inch.
  • Citrus Fruits: Zest only the colored outer peel to avoid the bitter white pith; zest first, then juice. For maximum juice, roll the fruit on the counter before cutting or briefly warm it in the microwave for 10–20 seconds.
  • Tequila: A silver (blanco) tequila works well for a clean, neutral flavor. If you prefer not to use alcohol, omit it—the citrus and agave still create great flavor.
  • Agave or Honey: Agave nectar gives an authentic margarita sweetness, but honey is a perfectly fine substitute if that’s what you have.

Krystle’s Tips: Steal My Culinary School Secrets

  1. Don’t Over-Marinate: Limit marinating to 1–4 hours. Extended exposure to citrus can over-tenderize the meat and leave it with a mushy texture.
  2. Bring to Room Temperature: Let chicken rest at room temperature 10–20 minutes before cooking so it heats more evenly and the exterior doesn’t overcook while the center comes up to temp.
  3. Pull Early: Chicken is safe at 165°F, but removing it at about 160°F and allowing it to rest lets carryover heat finish the cooking and keeps the meat juicier.
  4. Let It Rest: Rest cooked chicken 3–5 minutes, tented with foil, so the juices redistribute instead of running out when you slice.
  5. Slice Across the Grain: Cutting across the muscle fibers shortens them and makes each bite more tender.

Instructions

  1. In a large bowl, whisk together lime juice, orange juice, lime zest, orange zest, tequila (if using), olive oil, agave (or honey), minced garlic, salt, and pepper. Transfer the marinade to a resealable plastic bag or a covered container.
  2. If necessary, pound the chicken breasts to an even thickness of about ¾ inch between two pieces of plastic wrap. Add the chicken to the bag or container, pressing out excess air, and refrigerate to marinate for 1–4 hours.
  3. Remove the chicken from the refrigerator about 15–20 minutes before cooking to take the chill off. Pat the chicken dry with paper towels, then brush both sides lightly with olive oil.
  4. Grill or sauté the chicken over medium-high heat for about 4–5 minutes per side, until an instant-read thermometer reads about 160°F in the thickest part. Cooking times vary with thickness and heat source.
  5. Transfer the chicken to a plate and tent loosely with foil. Let it rest 3–5 minutes so carryover heat finishes the cooking and juices redistribute. Slice across the grain and serve.
