Crispy Skillet Breakfast Potatoes Recipe

I call this the hangover breakfast — ideal for New Year’s Day. Crisp breakfast potatoes paired with eggs and bacon are exactly what you want after a late night.

After a long, trying year, many of us are ready to say goodbye and welcome a fresh start. Whether you spent New Year’s Eve celebrating or simply curled up early, the morning after often calls for a simple, comforting breakfast. These potatoes are forgiving, flavorful, and ready in a fraction of the time of other methods.

New Year’s Eve has never been our biggest celebration — in recent years it’s been low-key and family-focused. Still, whether you stayed up late or kept it quiet, a hearty breakfast is a great way to start the new year. These skillet potatoes deliver crisp edges, a soft interior, and just enough spice to wake up the senses.

What makes these potatoes so easy is a small technique that cuts out parboiling entirely. You’ll get golden, crunchy surfaces and a tender inside using just one pan. No extra pots, no fuss, and less cleanup — perfect when you want quick comfort food with minimal effort.

A Trick for Making Simple Breakfast Potatoes

Many recipes call for parboiling potatoes first to ensure they cook through before browning. While that works, it adds time and more dishes. My trick: start the potatoes in a covered skillet over medium-low heat. The lid traps steam while the exterior begins to brown, so the inside cooks fully without the edges burning.

After about 7–10 minutes covered, take off the lid and increase the heat to medium-high. Flip the potatoes so each side gets direct contact with the pan and finishes browning. This two-stage method takes less time than parboiling and produces better texture: crisp outside, fluffy inside.

Whether you overindulged the night before or just want something satisfying, these skillet potatoes pair perfectly with eggs cooked any way you like, plus bacon or sausage. They require minimal hands-on time and deliver maximum flavor.

A simple, comforting skillet potato recipe that’s ideal for brunch or a hearty breakfast. Pair with eggs and bacon for a classic morning meal.

Ingredients

  • 3-4 medium russet potatoes, skins scrubbed and cut into cubes
  • ¼ cup (56 g) butter
  • ½ teaspoon Montreal steak seasoning
  • ½ teaspoon garlic salt
  • ¼ teaspoon paprika
  • tsp (or more to taste) cayenne pepper

Instructions

  • Melt the butter in a large skillet (cast iron works especially well) over medium-low heat. Add the cubed potatoes and sprinkle with Montreal steak seasoning, garlic salt, paprika, and cayenne. Stir to coat, then cover the skillet with a lid.
  • Cook covered for 7–10 minutes, allowing the potatoes to steam and begin to soften. Remove the lid, flip the potatoes with a spatula so they brown evenly, and increase heat to medium-high. Continue cooking, turning occasionally, until the potatoes are golden and crisp on all sides, about 5–7 minutes more.
  • Serve immediately with eggs and bacon or sausage, if you like. Garnish with chopped fresh herbs or a sprinkle of additional seasoning to taste.

Tips & Variations

  • For extra crispiness, spread the potatoes in an even layer and avoid overcrowding the pan. Work in batches if needed.
  • Swap the butter for oil for a lighter flavor, or use a mix of butter and oil for richer browning.
  • Add diced onions or bell peppers when you remove the lid so they caramelize along with the potatoes.
  • Leftovers reheat well in a skillet over medium heat to restore crispness. Store refrigerated up to 3 days.
