  • Small handful flat-leaf parsley, roughly chopped (optional garnish)

Pistachio Pesto

  • 1/3 cup (40–45 g) shelled pistachios**
  • 2 cups (25–30 g) parsley leaves and tender stems
  • 3 small garlic cloves, chopped
  • 1 medium lemon, zested and juiced
  • Pinch of salt and freshly cracked black pepper
  • 1/4 cup (60 mL) extra virgin olive oil
  • 1–2 tablespoons water, plus more as needed

Seed Sprinkle

  • 1 tablespoon extra virgin olive oil
  • 1/2 cup (70 g) pepitas
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon red pepper flakes
  • Pinch of cayenne pepper and salt

Instructions

  1. Preheat oven to 425ºF and warm two rimmed sheet pans for a few minutes.
  2. Prep carrots and onion as described, then toss with olive oil, salt, and pepper. Spread on the heated pans.
  3. Roast for 20–25 minutes, tossing once halfway through. Add chopped dates and roast 5–8 more minutes until everything is tender and caramelized.
  4. Make the pistachio pesto by pulsing pistachios, then adding parsley, garlic, lemon zest and juice, salt, and pepper. Blend while streaming in olive oil until smooth. Thin with water if needed.
  5. Make the seed sprinkle by toasting pepitas in olive oil with spices over medium heat, stirring constantly until golden, then cooling on a plate.
  6. Assemble: spread pesto on a platter, add roasted carrots, onions, and dates, then top with seed sprinkle and parsley.
