Pumpkin Stuffed Brownies Recipe
INGREDIENTS
1. Box of Brownie Mix With Chocolate Chips
Use your favorite boxed brownie mix—one that contains chocolate chips will give extra texture and chocolate pockets. If your mix doesn’t include chips, simply stir in about 1/2 cup semisweet chocolate chips to the prepared batter.
Follow the additional ingredients listed on the box (usually eggs, oil, and water). Brands vary, so check the package directions and have those items ready.
2. Pumpkin Puree
Be sure to buy pumpkin puree—not pumpkin pie filling, which already contains sugar and spices. If you prefer homemade, you can roast sugar pumpkins and purée them yourself; measure about 7.5 ounces if using a homemade batch.

3. Cream Cheese
A 6-ounce block of cream cheese, softened to room temperature, gives the pumpkin layer a creamy consistency and slight tang. Full-fat or reduced-fat both work; avoid fat-free varieties, which can become too watery during baking.
To soften quickly, unwrap and cut the block into pieces and let it sit for about 20 minutes. Softened cream cheese blends smoothly into the pumpkin filling without lumps.
4. Granulated Sugar
Granulated sugar sweetens the pumpkin mixture. If you prefer an alternative sweetener, you can experiment, but results may vary compared to the original recipe.

5. Pumpkin Pie Spice
Pumpkin pie spice adds the warm, familiar flavor to the filling. If you don’t have a pre-mixed spice, a blend of cinnamon, nutmeg, ginger, and cloves will do the trick.
INSTRUCTIONS
Start by preparing the brownie batter according to the directions on the box and preheat your oven as recommended. I used a mix that calls for 350°F.
If your mix is plain, fold in 1/2 cup semisweet chocolate chips after mixing the batter. Set the finished batter aside while you prepare the pumpkin filling.
In a medium bowl, combine pumpkin puree, softened cream cheese, granulated sugar, and pumpkin pie spice. Beat with a hand mixer until the mixture is smooth and no large lumps of cream cheese remain.
Prepare an 8×8-inch baking dish by greasing it or lining it with parchment paper, allowing the paper to overhang two sides for easy lifting.

Layer The Ingredients
Spread half of the brownie batter evenly across the bottom of the prepared pan. Carefully spoon the pumpkin filling over the brownie layer and spread it into an even layer, taking care not to mix it into the brownie batter.
Top with the remaining brownie batter and smooth the surface. Bake in a preheated oven for 35–40 minutes, or until a toothpick inserted into the center comes out clean. Because of the pumpkin layer, these brownies need about 10–15 minutes more than the box’s stated baking time.
Allow the pan to cool completely, then cover and refrigerate for at least one hour—up to overnight—to let the filling set. Remove from the pan using the parchment overhang and cut into 12–16 squares. These are rich, so smaller pieces are often enough.
Store cooled brownies in an airtight container at room temperature for up to four days.

- 1/2 can pumpkin puree

- 1 Tablespoon pumpkin pie spice

- You will need the ingredients called for on the back of the brownie box that you purchase.
Instructions
- Follow the instructions on the brownie box and preheat the oven accordingly. The brand of brownie mix that I purchased called for the oven to be at 350°F.
- Then make the brownie batter in a separate bowl, follow the directions on the box. Set the batter aside.
- In a separate medium size mixing bowl, add the pumpkin puree, softened cream cheese, sugar, and pumpkin pie spice. Use a hand mixer to mix until there are no clumps of cream cheese visible. Set aside.
- Spray an 8×8 inch baking dish with cooking spray or line it with parchment paper, leaving it overhang on at least two sides. Pour half of the brownie mix into the prepared pan and evenly spread it out.
- Then carefully pour and spread the pumpkin mixture on top.
- Cover the pumpkin spread with the remaining brownie batter.
- Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. *The brownies will need to bake longer than what is called for on the box.
- Once the brownies are done, remove the pan from the oven and let them cool completely. Cover and refrigerate for at least an hour and up to overnight.
- Slice the brownies into 12 squares and serve.
Store at room temperature in an air-tight container for up to 4 days.
Notes
If you can’t find a boxed mix that includes chocolate chips, add 1/2 cup of semisweet chocolate chips to the prepared batter.
