Ingredients
- 1 lb boneless, skinless chicken breasts, cut into chunks
- 2 tablespoons olive oil
- 1 teaspoon minced garlic
- ½ lb short pasta (fusilli, penne, rigatoni, or farfalle)
- 1 (15 oz) can chicken broth
- 4 oz cream cheese, cut into cubes
- ⅓ cup basil pesto
- ½ cup grated Parmesan cheese
- Salt and pepper, to taste

Instructions
- Season the chicken chunks with a generous pinch of salt and pepper.
- Heat the olive oil in a large, deep skillet or Dutch oven over medium heat. Add the chicken and brown it on all sides. The chicken does not need to be completely cooked through at this stage.
- Add the garlic and cook for 30 seconds to 1 minute until fragrant. Stir to combine with the chicken.
- Add the uncooked pasta and chicken broth to the skillet. Stir and scrape up any browned bits from the bottom. Cover the pan and raise the heat to bring the mixture to a boil.
- Once boiling, reduce to a simmer and cook about 8–9 minutes, stirring every 2–3 minutes and replacing the lid, until the pasta is tender and most of the liquid is absorbed. The chicken should finish cooking during this time.
- When the pasta is cooked, stir in the cream cheese, pesto, grated Parmesan and red pepper flakes. Mix until the cream cheese melts and the sauce becomes smooth. Taste and adjust seasoning with extra salt and pepper if needed.
- Serve immediately with a sprinkle of fresh parsley or extra cheese if desired.
Notes
Chicken is safely cooked when it reaches an internal temperature of 165°F (74°C). If using a different type of pasta, cooking times may vary slightly; adjust the simmering time and amount of liquid as needed.
