I had two pints of dulce de leche frozen vegan yogurt in the freezer and decided to use some of it in a multigrain loaf. I added agave syrup for a gentle sweetness that comes through especially well when the slices are toasted and served with butter or a warm beverage. The result is a soft, pleasantly sweet bread with subtle caramel notes—great for breakfast, snacks, or sandwiches.
The loaf uses whole wheat and bread flours combined with oats and flax for texture and nutrition. The oats and flax are lightly ground so they blend into the dough, contributing body without overpowering the flavor. The recipe yields a tender crumb that holds together well when sliced, and refrigerating the loaf briefly before slicing makes for cleaner cuts.

Ingredients
- 3 cups whole wheat flour
- 1 cup bread flour
- 1 cup oats
- 1/2 cup flax seeds (or flaxseed meal)
- 1 teaspoon raw sugar
- 1.5 teaspoons active yeast
- about 1 cup warm water (adjust as needed)
- 5–6 tablespoons vegan dulce de leche frozen yogurt (use more for a sweeter loaf, or any non-dairy yogurt)
- 1 tablespoon vegan butter, softened
- 2 tablespoons agave syrup
- 1/2 teaspoon salt
Instructions
- Combine the warm water, active yeast, and raw sugar in a small bowl. Stir and let stand for about 10 minutes, until the mixture becomes frothy.
- In a blender or food processor, pulse the flax seeds and oats until they are coarsely ground. You can use pre-made flaxseed meal if preferred.
- In a large mixing bowl, combine the whole wheat flour, bread flour, salt, and the ground oats/flax mixture. Mix to distribute evenly.
- Add the yeast mixture, softened vegan butter, dulce de leche frozen yogurt, and agave syrup to the dry ingredients.
- Knead the dough for 8–10 minutes, either by hand or with a mixer, scraping the sides every few minutes. Add small amounts of flour or water as needed to achieve a soft, slightly tacky dough.
- Place the dough in a lightly oiled, covered container and let it rise in a warm place for about 1.5 hours, until nearly doubled. Lightly mist or oil the top to prevent a crust forming.
- Punch the dough down, then shape it into a loaf. You can form a basic loaf by pulling the dough edges toward the center or by rolling it into a tight log and tucking the ends underneath.
- Place the shaped loaf in a greased bread pan. Cover with a damp towel and let it proof in a warm place for about one hour, until it has risen noticeably.
- Remove the towel, lightly mist the top with water, and bake the loaf at 375°F (190°C) for 40–45 minutes, until the crust is golden and the loaf sounds hollow when tapped.
- Remove the bread from the pan and let it cool for at least an hour on a wire rack. For cleaner, firmer slices, refrigerate the loaf for an additional hour before slicing.

Tips and Variations
- To adjust sweetness, increase or decrease the dulce de leche yogurt or agave syrup. For a less sweet loaf, reduce the agave by half.
- Substitute seeds or grains: try adding a few tablespoons of sunflower or pumpkin seeds, or swap some whole wheat flour for barley or millet for a different texture. If using whole grains, consider pre-soaking them or using cooked grains for the best results.
- For a softer crust, brush the top with a little vegan butter as soon as the bread comes out of the oven.
- If the dough feels too sticky while kneading, add flour a tablespoon at a time; if it’s too dry, add water a teaspoon at a time. The dough should be slightly tacky but manageable.
- Experiment with shapes—braids or freeform rounds will change the baking time slightly, so monitor closely and adjust as needed.
Serving and Storage
This loaf is lovely toasted and served with vegan butter, nut butters, or jam. It pairs nicely with coffee, tea, or a plant-based milk. Store wrapped at room temperature for up to two days, or refrigerate for up to a week. For longer storage, slice and freeze; toast slices directly from frozen.
