I made this chowder after receiving a big batch of fresh corn. It’s creamy, comforting, and full of texture—perfect for a weeknight meal or a cozy weekend dinner. Three small additions—charred corn, toasted sun-dried tomatoes, and crispy seasoned tofu—add layers of flavor that make this bowl memorable.

Start by toasting garlic and red pepper flakes in oil to perfume the oil. Add a little chopped sun-dried tomato and briefly toast it to release its aroma—this adds a savory depth that balances the chowder. Char the corn to bring out a smoky-sweet note: I like to grill the ears or hold them over a gas flame until they develop distinctly black spots, then cut the kernels off the cob. Finally, top the chowder with plenty of fresh garnish and crispy tofu “bacon” crumbles for a satisfying contrast of textures.

This creamy corn chowder is rich and comforting, with smoky charred corn and crispy seasoned tofu crumbles for a satisfying finish. Small techniques—browning aromatics, toasting sun-dried tomato, charring corn, and crisping tofu—bring big flavor.

Ingredients

For the Charred Corn

  • 3 ears corn on the cob, husks and silk removed (or about 2½ cups frozen corn)

For the Tofu

  • 7 ounces firm or extra-firm tofu, pressed and crumbled or cubed

For the Tofu “Bacon” Marinade

  • 1½ tablespoons soy sauce (or coconut aminos for soy-free)
  • 1 tablespoon maple syrup
  • 1½ teaspoons smoked paprika
  • ½ teaspoon garlic powder
  • 2 teaspoons oil (or oil from sun-dried tomatoes)
  • Liquid smoke, a few drops (optional)

For the Corn Chowder

  • 2 teaspoons extra-virgin olive oil (or oil from sun-dried tomatoes)
  • 3–4 cloves garlic, finely chopped
  • ½ teaspoon red pepper flakes
  • 1 cup chopped red (or white) onion
  • ¾ teaspoon salt, divided
  • 1 tablespoon chopped sun-dried tomato (oil-packed), drained
  • 1 hot green chili (serrano or jalapeño), finely chopped (optional)
  • 2 bay leaves
  • ½ cup chopped carrots, small dice
  • ½ cup chopped celery, small dice
  • 1 tablespoon flour (or cornstarch/gluten-free flour)
  • 2 tablespoons nutritional yeast
  • ½ teaspoon black pepper
  • 1½ cups cubed potatoes (½” pieces)
  • 2 cups vegetable stock
  • ½ cup non-dairy cream (yogurt, cashew cream, coconut cream, or similar)

For Garnish

  • Chopped green onion
  • Chopped red bell pepper
  • Reserved charred corn kernels

Tips

  • Blacken the corn well when charring to develop the best smoky-sweet flavor.
  • Use finely chopped garlic (not grated) so it sautés without sticking and burning.
  • Briefly toasting ingredients—garlic, pepper flakes, sun-dried tomato—adds important depth. Don’t skip those steps.

How to Make Corn Chowder

Char the corn over a grill or stovetop flame, turning frequently so it blackens in spots. Once nicely charred, cut the kernels off the cob. Reserve about 2 tablespoons for garnish, if desired.

Preheat the oven to 400°F (205°C) and line a baking sheet. Press the tofu, then crumble or cube it. Whisk the tofu marinade together and toss the tofu to coat. Spread the tofu on the sheet and bake about 20 minutes, stirring once or twice and moving pieces from the edges toward the center. If the edges brown quickly, lower the oven to 325°F (165°C) and continue until most pieces are crisp. Turn off the oven and let the tofu sit a few minutes to further crisp if needed.

adding crumbled tofu to the bowl of marinade

Heat a large skillet over medium heat and add oil. When hot, add the minced garlic and red pepper flakes and stir for about 30 seconds until the smaller garlic pieces start to color. Add the onion and ¼ teaspoon salt and cook 3–5 minutes until translucent. Stir in the chopped green chili and sun-dried tomato and toast for about 30 seconds. Add carrots, celery, and another ¼ teaspoon salt and cook 2 minutes.

Add the flour, bay leaves, nutritional yeast, and black pepper, stirring briefly. Add the potatoes, charred corn kernels, stock, and the remaining ¼ teaspoon of salt. Cover and simmer about 15 minutes or until the potatoes are very tender—this helps thicken the chowder naturally.

Stir in the non-dairy cream and bring the soup to a gentle boil. Taste and adjust seasoning—add more salt, a squeeze of lemon to brighten, or smoked paprika for extra smokiness. Remove the bay leaves and use an immersion blender to purée a portion of the soup, or transfer a portion to a blender and purée, then return it to the pot. Simmer a few minutes so flavors meld.

Turn off the heat and ladle the hot chowder into bowls. Garnish with the reserved charred corn, chopped green onion, chopped red bell pepper, and the baked tofu crumbles. Serve with crusty bread, garlic toast, or on its own for a comforting meal.

Frequently Asked Questions

Is this recipe allergy friendly?

This chowder can be nut-free if you choose a nut-free non-dairy cream. For gluten-free, substitute cornstarch or gluten-free flour for the flour and use coconut aminos instead of soy sauce. To make it soy-free, use a soy-free non-dairy cream and replace the tofu with a soy-free alternative such as pumpkin-seed or chickpea-based tofu, and use coconut aminos in the tofu marinade.
