My best tips for the creamiest mashed potatoes

Start with cold water. Place the potato chunks in cold, salted water and then bring them to a simmer. This helps them cook evenly without becoming gummy on the outside.

Don’t overcook the potatoes. Cook until fork-tender but not falling apart; overcooked potatoes absorb extra water and can become gluey.

Warm your dairy. Heating the butter and cream slightly before adding keeps everything smooth and prevents the potatoes from cooling too quickly.

Mash gently. Use a potato masher or ricer and avoid electric mixers. Overworking the potatoes releases excess starch and makes them gummy.

Add butter first, then cream. Butter coats potato starches and helps prevent gumminess. Add cream slowly until you reach the texture you want.

Taste and season as you go. Potatoes need more salt than you might expect. Adjust after each addition, keeping in mind Parmesan adds salt too.

Instructions

  • Preheat the oven and prepare the garlic: Trim about 1/4″ off the top of the garlic head to expose the tops of the cloves. Drizzle with olive oil, wrap the head in foil, and roast until very soft, about 1 hour. When cool, squeeze the roasted cloves from their skins.
  • Prepare the potatoes: Rinse, peel, and rinse again under cold running water. Put the potato chunks into a large pot, add a generous pinch of salt, and cover with cold water. Bring to a boil, then lower the heat and simmer until potatoes are fork-tender, about 30 minutes depending on size.
