Sweet Corn – Incorporate it Two Ways

To build a thick, creamy soup with deep corn flavour, this recipe uses corn two ways:

  • Sweet corn kernel paste: Instead of canned cream-style corn, blend a portion of fresh corn kernels into a coarse paste. Adding this paste while cooking gives the soup body and a natural corn creaminess without processed ingredients.
  • Whole sweet corn kernels: Reserve some whole kernels for texture. The burst of sweet corn as you bite into the kernels adds a pleasant contrast to the creamy base.

Prepping the Vegetables

This soup is happiest when loaded with vegetables. Use generous amounts of beans, carrots and spring onions. Chop everything into uniform pieces so the vegetables cook evenly. Put on some music and enjoy the chopping — it’s the easiest part of the recipe.

Cornflour Slurry

A cornflour (cornstarch) slurry is the best quick thickener for this soup. Mix the specified cornflour with cold water and stir until completely smooth before adding it to the simmering soup. Within seconds the soup will thicken and become translucent when the cornflour is cooked. If you prefer, cornstarch works similarly, though measurements may vary slightly.

Top Tips for the Best Sweet Corn Soup

  • Use both corn paste and whole kernels to get creaminess plus texture.
  • Make a lump-free slurry: Always dissolve cornflour into cold water and whisk well.
  • Let the soup simmer: A gentle simmer melds flavours and lets the soup thicken properly.
  • Season carefully: This version uses ground pepper, vinegar and light soy sauce for balanced savoury notes. Adjust with chilli sauce, white pepper or chilli vinegar if you like more heat.

FAQs

How can you tell when corn is cooked?

Cooked corn kernels become tender but still slightly firm and lose the wrinkled, raw appearance. They also take on a deeper yellow colour and emit a sweeter aroma.

How should leftovers be stored?

Store leftover soup in a clean airtight container in the refrigerator for up to a week. For longer storage, cool completely and freeze in freezer-safe containers; the soup will keep for several months. Thaw and reheat gently before serving.

Serve this soup with garlic bread sticks, crusty bread or soup sticks. Because it’s packed with vegetables, it can be a satisfying light meal on its own or a warming starter before your main course.

We love soup — it’s a reliable comfort food any day of the year.

Notes & Nutrition

Notes

  • Using both blended corn paste and whole kernels gives a rich, creamy texture plus delightful bites of sweet corn.
  • Cut vegetables to similar sizes to ensure even cooking.
  • Ensure the cornflour slurry is lump-free before adding to the soup. Lumps do not dissolve well once added to hot liquid.
  • Adjust heat and acidity with chilli sauce, chilli vinegar, or white pepper as preferred.
