Ingredients

  • ½ cup white whole wheat flour
  • ¼ cup unsweetened cocoa powder
  • 2 tablespoons arrowroot powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup coconut sugar (or brown sugar or organic cane sugar)
  • ½ cup tahini
  • 1 tablespoon pure vanilla extract
  • ½ cup unsweetened almond milk (or plant milk of choice)
  • ¼ cup dairy-free chocolate chips

Icing (optional)

  • ⅓ cup organic powdered sugar
  • 1½ tablespoons unsweetened almond milk or a red fruit juice for a pink hue

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Lightly spray a 12-cavity heart-shaped mini muffin pan or a mini muffin pan and set aside.
  3. In a small bowl, whisk together the flour, cocoa powder, arrowroot powder, baking soda, salt, and sugar.
  4. In a medium bowl, whisk the tahini, vanilla, and non-dairy milk until smooth.
  5. Pour the dry ingredients into the wet and stir until just combined.
  6. Fold in the chocolate chips.
  7. Spoon the batter into the prepared pan, filling each cavity no more than halfway.
  8. Bake 23–25 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan on a wire rack for at least 20–30 minutes before removing to avoid crumbling.
  10. Drizzle the optional icing (powdered sugar mixed with a little milk or juice) over cooled cupcakes, if desired.

Notes

If you don’t have a heart-shaped mini muffin pan, a regular mini muffin pan works fine. For standard-size muffins, fill each cavity about ¾ full and bake 25–28 minutes; you should get about 8 cupcakes. These cupcakes are soft and delicate—allow adequate cooling time in the pan to ensure they set before removing.
