Full disclosure: my purse is enormous and well-stocked. It holds everything from pain reliever to wet wipes, and—most importantly—a reliable stash of snacks. Granola bars are my go-to for quick energy on busy days. They’re compact, satisfying, and they make it easy to curb hunger between errands or while traveling.

I’ve relied on store-bought chewy bars for years, but once I made these pumpkin chocolate chip granola bars, they replaced the boxed ones in my rotation. Made with simple pantry ingredients and no complicated techniques, they deliver comforting autumn flavor while still being hearty and portable.

This recipe, inspired by Two Peas and Their Pod, combines canned pumpkin puree with applesauce and honey to bind old-fashioned oats and brown sugar, while pumpkin pie spice, cinnamon, nutmeg and a splash of vanilla lift the flavor. A cup of chocolate chips folds in at the end for melty pockets of sweetness. The result is a chewy, moist bar that still holds together well when pressed and baked properly.

These bars are forgiving and straightforward to make: whisk the dry ingredients, mix the wet ingredients until smooth, combine everything, press into an 8 x 8 pan and bake until golden and set. Because pumpkin keeps the mixture moist, it’s important to watch for a golden color and a firm surface so the bars don’t end up under-baked.

Serve them warm straight from the pan or let them cool completely before slicing. They travel well in a lunchbox or a day bag and make a nice breakfast-on-the-go, an afternoon snack, or an easy addition to a picnic. If you like, warm one briefly and enjoy it with a smear of nut butter for extra richness.

Storage and variations: store cooled bars in an airtight container at room temperature for a few days, or refrigerate to keep them longer. They also freeze nicely—wrap individual bars or stack them with parchment between layers and freeze for quick snacks later. For variety, swap the chocolate chips for dried fruit, add chopped nuts for crunch, or substitute maple syrup for the honey to change the flavor profile.

Baking tips: press the oat mixture firmly and evenly into the pan so the bars hold together after baking. Use old-fashioned rolled oats for the best chew and texture; quick oats will produce a softer, less structured bar. Check the bars at the lower end of the bake time—35 minutes—and continue until the top is golden and the center feels set to the touch.

Ingredients 

  • 3 1/4 cups old fashioned oats
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • ¾ cup brown sugar
  • ½ cup pumpkin puree
  • ¼ cup applesauce
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 350 degrees F. Spray an 8 x 8 baking pan with cooking spray and set aside.
  • In a large bowl, whisk oats, spices, and salt together. Set aside.
  • In a medium bowl, whisk brown sugar, pumpkin, applesauce, honey, and vanilla extract until smooth. Pour over oats and stir well, until all of the oats are moist. Stir in chocolate chips.
  • Evenly press oat mixture into prepared pan. Bake for 35-40 minutes, or until golden brown. The pumpkin keeps the bars moist, so make sure they are golden and set -you don’t want them to be under-baked.
  • Remove from oven and let cool completely. Using a sharp knife, cut into bars.
  • Enjoy!
