Like our low-carb “apple” muffins and pies, this recipe uses a concentrated banana extract and a blend of keto flours to mimic the familiar banana aroma and flavor without fresh bananas. The result is a dense yet cakey loaf that stays moist and rich. You can bake it as a loaf or portion the batter into muffin tins for handheld treats.

Optional mix-ins like chopped pecans, walnuts or sugar-free chocolate chunks add texture and variety. A pat of butter or a drizzle of keto-friendly caramel makes a lovely finishing touch.

Key Ingredients and Tips

Banana extract: A high-quality banana extract is essential for authentic flavor. Use a sugar-free extract and add it to taste — 2 teaspoons gives a gentle banana note, while 3 teaspoons provides a bolder flavor.

Sweeteners: For the best texture and minimal aftertaste, allulose is an excellent choice (use about 30% more by volume than sugar). Golden erythritol, xylitol (avoid xylitol if you have pets), or a coconut sugar substitution will also work. If you choose sugar alternatives with sugar alcohols, be mindful of digestive tolerance.

Molasses: A teaspoon of blackstrap molasses is optional but adds depth, a brown-sugar flavor, and additional browning. If using molasses, account for the small amount of extra carbs it contributes.

Flours: I recommend a blend of finely ground almond flour, golden flaxseed meal (reground for best texture), psyllium husk (finely ground or reground), and a small amount of coconut flour. Regrinding flax and psyllium helps with rise and gives a more uniform crumb.

  • 114 g grass-fed unsalted butter
  • 128 g almond flour (very fine)
  • 46 g golden flaxseed meal, finely ground
  • 18 g psyllium husk, finely ground
  • 14 g coconut flour
  • 1 tablespoon baking powder
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon kosher salt
  • 4 eggs
  • 2/3–1 cup sweetener of choice (golden erythritol, allulose, xylitol, or coconut sugar). I use about 3/4 cup.
  • 1 teaspoon blackstrap molasses (optional)
  • 2–3 teaspoons banana extract (use 3 tsp for a stronger flavor)
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • 90 g full-fat Greek-style yogurt or sour cream
  • 2/3–1 cup roughly chopped pecans or walnuts (optional)

Instructions

  1. Brown the butter (optional): Heat the butter in a small saucepan over medium-low heat. Simmer, stirring occasionally, until it develops a nutty aroma and a light brown color (about 4–6 minutes). Remove from heat and let cool slightly.
  2. Preheat oven to 350°F (180°C). Line or grease an 8.5 x 4.5″ or 5 x 9″ loaf pan and dust lightly with coconut flour if needed.
  3. Whisk the dry flours and leavening: In a medium bowl combine almond flour, flaxseed meal, psyllium husk, coconut flour, baking powder, xanthan gum, and salt. Set aside.
  4. Beat the wet ingredients: In a large bowl, beat the eggs with the sweetener and molasses (if using) for 3–5 minutes until airy and lighter in color. With the mixer running, add banana extract, vanilla, apple cider vinegar, and the cooled browned butter.
  5. Combine wet and dry: Add the dry mixture to the wet ingredients in two additions, alternating with the yogurt. Mix 2–3 minutes until well combined and elastic; the batter will thicken.
  6. Fold in nuts if desired. Spread the batter evenly in the prepared pan and smooth the top with a wet spatula.
  7. Bake 55–65 minutes until deep golden and a toothpick inserted in the center comes out clean. Check after 15 minutes and cover loosely with foil once the top begins to brown (about 20 minutes in most ovens). For muffins, bake 25–30 minutes.
  8. Cool in the pan for 15 minutes, then transfer to a rack to cool completely before slicing or glazing. The loaf continues to set as it cools, so allow it to rest before cutting.

Notes

  • For best texture and rise, regrind psyllium husk and flaxseed meal in a dry blender or spice grinder.
  • Sweetness perception can change on a keto diet; use the range of sweetener suggested to suit your taste. The higher amount matches conventional sweetness; the lower amount keeps sugar alcohols and carbs down.
  • Adjust banana extract to your preference: 2 teaspoons for mild banana flavor, 3 teaspoons for stronger flavor.
  • Be cautious with xylitol if you have pets — it is toxic to dogs and some other animals.
