Cake

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon aluminum-free baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, at room temperature
  • 3/4 cup granulated sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 large egg plus 1 egg yolk, at room temperature
  • 2/3 cup plain Greek yogurt, at room temperature
  • 1/3 cup buttermilk, at room temperature
  • 1/4 cup blackberry preserves or jam
  • 1 1/2 cups fresh berries (a mix of raspberries, blackberries, and blueberries recommended)

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare an 8-inch square baking pan by coating it with nonstick spray and lightly dusting with flour or lining it with parchment paper for easy removal.
  2. Make the streusel: In a medium bowl, whisk together the flour, granulated sugar, brown sugar, cinnamon, and salt. Stir in the melted butter with a fork until the mixture becomes crumbly and evenly moistened. Place the streusel in the freezer to keep it chilled until ready to use.
