One Bowl Coffee Cake with Cinnamon Streusel

When the weekly theme for the baking group I belong to was announced on Monday, I read the group leader’s recipe and knew immediately I wouldn’t be searching for alternatives or making variations this week. It was one of those rare recipes that demanded no tinkering — a true one-bowl coffee cake with chocolate chips and a crunchy biscuit crumble. My oven was practically preheating before I finished reading it.

This recipe comes from Subhashini Ramsingh of Fondbites, adapted from Sailu’s Food. It’s a simple, dependable cake that’s soft, moist and has a pronounced coffee flavor. A light, crunchy topping of crushed biscuits and chocolate chips (or chopped nuts) adds a pleasing contrast in texture.

The cake strikes a lovely balance between fluffy and moist. It’s the kind of cake you can pick up and enjoy without sticky fingers, yet it still melts on your tongue. The coffee note is prominent but not overpowering, and the biscuit-choc chip crumble elevates the overall experience. Ingredients

  • 170 grams (3/4 cup) unsalted butter, at room temperature
  • 2 eggs, at room temperature
  • 150 grams (3/4 cup) sugar
  • 120 ml (1/2 cup) milk, at room temperature
  • 125 grams (1 cup) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt (omit if using salted butter)
  • 1 tbsp instant coffee (or coffee powder)
  • 1 tbsp vanilla extract
  • 1/2 cup crushed cookies, chopped nuts or chocolate chips (optional, for topping)

Instructions

  1. Preheat the oven to 180°C (350°F). Grease and lightly flour an 8-inch round pan or a bundt pan. (The original baker used a 6-inch oval pan and made two smaller cakes.)
  2. Prepare your topping by crushing biscuits or cookies and mixing them with chocolate chips or chopped nuts. Set this mixture aside.
  3. In a large mixing bowl, measure and combine the butter, eggs, sugar, milk, flour, baking powder, salt, coffee and vanilla. Beat the mixture until uniform and fluffy. Depending on your mixer, this may take 5–10 minutes. If you don’t have an electric mixer, vigorous whisking will also work but take a bit more time and effort.
  4. The batter should be thick and airy. It may look slightly curdled at first, but it bakes up beautifully.
  5. Pour the batter into the prepared pan and level it gently.
  6. Sprinkle the crushed biscuit-chocolate chip mixture over the top of the batter. If you’re using a bundt pan and want the crumble to sit inside the cake, put the mixture in the pan before adding the batter so it settles at the bottom.
  7. Bake at 180°C (350°F) for 28–32 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs attached.
  8. Allow the cake to cool in the pan for about 5 minutes, then invert it onto a rack and cool completely before slicing.

Notes & Tips

  • Using an electric beater helps incorporate air into the batter and gives a lighter texture. If you don’t have one, whisk thoroughly by hand until the batter is fluffy.
  • This recipe scales easily: half the recipe yields a smaller cake and works equally well.
  • If the biscuit-chocolate topping sinks during baking or you skip it entirely, dust the cooled cake with icing sugar, drizzle with a simple chocolate ganache, or add a light glaze for extra appeal.
  • For a stronger coffee flavor, dissolve the coffee in a tablespoon of warm milk before adding it to the batter. Adjust to taste.
