When I first saw Easy Vegan Cheesecake with Purple Sweet Potatoes by Eva Kosmas Flores, I was instantly inspired to riff on the idea. That gorgeous purple hue begged to be turned into a showstopping cheesecake — and the result balances stunning color with rich, cozy flavors.

How to Make This Sweet Potato Cheesecake
Make a pecan-graham crust in a food processor and par-bake it in a springform pan. Roast purple sweet potatoes until tender, scoop out the flesh, and combine it with mascarpone, cream cheese, sugar, maple syrup, spices and eggs. Blend until smooth, pour over the cooled crust, and bake. Chill to set and finish with your favorite garnishes.



Don’t be intimidated by cheesecake — mine is intentionally rustic, which means small cracks are fine. Skipping a water bath makes this recipe easier to prepare while still producing a creamy, flavorful texture.

Purple Sweet Potato Cheesecake with Pecan-Graham Cracker Crust
Ingredients
Graham Cracker Pecan Crust
- 10 graham crackers
- ½ cup pecans
- 6 tablespoons melted butter
- 3 tablespoons granulated sugar
- ½ teaspoon cinnamon
- ¼ teaspoon ground nutmeg
- ½ teaspoon kosher salt
Purple Sweet Potato Filling
- 1 pound (about 3 ounces measured after peeling) purple sweet potatoes
- 16 ounces mascarpone
- 8 ounces cream cheese
- 3 eggs, lightly beaten
- ½ cup brown sugar
- ¼ cup maple syrup
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ teaspoon vanilla extract
- Pinch of kosher salt
For Garnish
- 2 tablespoons chopped nuts (pistachios, pecans, hazelnuts or walnuts)
- Fresh berries or pomegranate arils, as desired
Instructions
- Preheat the oven to 400°F. Prick the sweet potatoes with a fork, wrap each in foil, place on a baking sheet and roast until very tender, about 1 to 1½ hours depending on size. Let cool until you can handle them, then peel and roughly chop into 1-inch pieces. Reduce oven temperature to 350°F.
- Make the crust: Pulse graham crackers in a food processor until they form fine crumbs. Add pecans, sugar, spices and melted butter; pulse until combined. Press the mixture into the bottom and up the sides of a springform pan. Chill the crust in the fridge for 15 minutes, then bake for 10 minutes. Allow the crust to cool completely.
- In a food processor or stand mixer fitted with the whisk attachment, beat mascarpone, cream cheese, vanilla, brown sugar, maple syrup, cinnamon, nutmeg and a pinch of salt until smooth, scraping the bowl as needed. Slowly add the eggs while blending, then add the roasted sweet potato flesh and continue mixing until fully incorporated and silky.
- Pour the filling over the cooled crust and smooth the top. Bake at 350°F for about 1 hour to 1 hour 15 minutes, until the center is mostly set but still slightly jiggly. Turn off the oven, crack the door and let the cheesecake cool gradually to help prevent large cracks.
- Chill the cheesecake for at least 4 hours or overnight to fully set. Before serving, garnish with chopped nuts, fresh berries, pomegranate arils or edible flowers as you like.
