This recipe, a vibrant carrot and fennel soup, is one of my favorites from the Winter: A Time of Hibernation series. It’s bright, silky, and full of simple, wholesome flavor.

Pureed soups are especially appealing because they’re gentle on the digestive system. When vegetables are blended, they’re essentially partially broken down already, which can make them easier to consume when you want something nourishing but not heavy. The texture also makes the flavors meld together, creating a satisfying single-note harmony rather than competing bites.

This particular soup is quick to prepare—ready from start to finish in under 30 minutes—yet it feels like a cozy, slow-made bowl. It’s vegan and naturally free from gluten and dairy when you use a non-dairy milk. The fennel lends a subtle aniseed aroma that pairs beautifully with the sweetness of carrots and the savory depth of onion and garlic. A splash of unsweetened non-dairy milk at the end makes the finished soup luxuriously creamy without dairy.

Below you’ll find the recipe and straightforward instructions. The method is forgiving: sauté the vegetables until tender, simmer briefly in broth, then blend until smooth. If you prefer a chunkier texture, you can reserve some cooked vegetables and stir them back in after blending. Otherwise, strain or adjust consistency with more broth for a thinner finish.

Ingredients
  • 1 tablespoon coconut oil
  • 4 cups chopped carrots
  • 2 fennel bulbs, chopped (reserve some fronds for garnish if you like)
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable broth (preferably homemade or low-sodium)
  • 1/2 teaspoon fresh thyme (or 1/4 teaspoon dried thyme)
  • 1/4 teaspoon Himalayan rock salt, or to taste
  • 1/2 teaspoon freshly ground black pepper, or to taste
  • 1 cup unsweetened non-dairy milk (such as almond or coconut milk)
Instructions
  1. In a large soup pot, heat the coconut oil over medium-high heat until shimmering.
  2. Add the chopped carrots, fennel, onion, and minced garlic. Sauté for about 8 minutes, stirring occasionally, until the onions are translucent and the carrots are just tender-crisp.
  3. Pour in the vegetable broth, bring the mixture to a boil, then reduce heat to a simmer. Cover and simmer for 10 minutes, or until the carrots are fully tender.
  4. Stir in the thyme, salt, and pepper. Remove the pot from heat and allow the soup to cool slightly for a few minutes before blending.
  5. Carefully transfer the soup in batches to a blender and puree until completely smooth. Alternatively, use an immersion blender directly in the pot for a quicker method.
  6. Return the blended soup to the pot over low heat and stir in the non-dairy milk. Warm through gently, tasting and adjusting seasoning as needed.
  7. Serve hot with a garnish of fennel fronds, a drizzle of olive oil, or a sprinkle of cracked pepper.

This soup pairs well with crusty bread, a simple side salad, or roasted vegetables for a fuller meal. For added texture, top bowls with roasted pumpkin seeds, a spoonful of plain dairy-free yogurt, or a scattering of finely chopped fresh herbs.

Leftovers keep well in the refrigerator for 3 to 4 days when stored in an airtight container. To freeze, cool completely and transfer to freezer-safe containers for up to three months. Thaw overnight in the refrigerator and reheat gently on the stove, adding a splash of broth or non-dairy milk if it has thickened.

Tweaks and substitutions are easy: swap in sweet potatoes or butternut squash for some or all of the carrots for a different sweetness and color; use water and extra seasonings if you don’t have broth on hand; or add a small knob of ginger while sautéing for a warming, spicy lift. Keep seasoning adjustments gentle—fennel’s subtle licorice note is the star and pairs best with complementary, not overpowering, flavors.
